Rhubarb is one of our favorite things about summer. Though they look like an odd cross between Swiss chard and celery, these super-tart plant stalks actually make some of the most easy summer desserts—often by pairing with similarly seasonal fruit, such as strawberries, or other berries.
They're not around forever, though. Whether you've stumbled across them at your favorite farmers market or grocery store, or you're growing some in your garden or front yard, the opportunities to cook with fresh rhubarb are limited, often to just a few weeks in the spring and early summer. If you like rhubarb, we highly recommend cooking up a big batch of poached rhubarb, rhubarb sauce, chutney, or compote and storing it in your freezer or fridge. That'll give you plenty of opportunities to use the distinct flavor in pies or ice creams, over granola, as a sauce for savory dishes like grilled chicken, or even in cocktails. Of course, it's well worth saving at least a little for cooking with straightaway. While it's most often cooked with sugar to offset the tartness, you can actually eat rhubarb raw, or put shavings into a salad or slaw. (Though don't eat rhubarb leaves. They are poisonous.)
