At just 16 years old, a Michigan teen is already making a name for herself in the baking world, appearing on national television cooking shows, and building her baking empire, one cake, cookie, or macaron at a time. Kamryn Chasnis might be young, but she is already an experienced chef, and you can expect to see much more of her in the future.

“I’ve always loved baking, ever since I was little,” Chasnis said. “I was actually watching ‘Master Chef Junior’, the show I ended up competing one, and I went out into the kitchen and I made one of the dishes. After that I just grew to love it and I just kept doing more recipes, growing my experience, and all of the things I was learning. I kept practicing, and eventually people wanted to order things I was making, so I turned it into Kamryn’s Creations.”

Kamryn’s Creations is Chasnis’ baking business, and her French macaron is our pick for Sweet Treat of the Week, a series highlighting people and products from around Michigan who are using Pioneer Sugar in their creations.

Getting picked to be on ‘Master Chef Junior’ was “pretty crazy” according to Chasnis. “I spent two weeks in L.A. with a bunch of different people from all over the U.S. I got to meet Gordon Ramsey, Christina Tosi. It was a whole Hollywood set. It was so crazy.”

Chasnis' has been running her baking business for the last few years, and normally offers not just a variety of sweet treats, but also in person baking classes. She is still offering classes, but with a reduced number of students, masked up, and socially distanced. You can see the current list of offerings here, and the next three are all on making macarons. She is also offering several different ‘baking kits’ that you can pick up, and lend your very own touch to her homemade baked goods. Available are brownie kits, a Dollie and Me cupcake kit, and seasonal holiday cookie decoration kits, that come with everything you need to make beautiful sugar cookies, from frosting to sprinkles.

Chasnis has also been doing video tutorials. “I’ve been doing lots of live streams on Facebook,” Chasnis said. “And lots of decorating kits that people can pick up at my door, or I can drop off at their door, and then they join the live stream, so they can still cook along interactively.”

Chasnis picked her traditional French macarons for Sweet Treat of the Week. These are not macaroons, which are coconut cookies bound together with egg whites and sugar. Instead, these are the brightly colored sandwich cookies, that are based on a crunchy meringue cookie, surrounding a flavored, creamy buttercream.

“It is a very delicate sandwich cookie,” Chasnis explained. “They’re super hard to make. I actually took a class on how to make them. They’re super popular, so yummy, they taste like straight sugar. They’re also my favorite thing to make.”

So what are Chasnis' tips for making these charming little gems?

“Always make sure your egg whites are at stiff peaks,” Chasnis said, explaining how much you have to whip your egg whites when making your base meringue. “If they’re not stiff peaks, they’re not going to work. The way you can check this is to flip your bowl upside down, and if they don’t fall out of the bowl, you’ve successfully reached stiff peaks.”

“Make sure when you are folding your batter to not over fold. That is the make it or break it moment for your macarons, and you want to make sure they’re successful.”

In addition to her French macarons, which you can order from her here, another popular offering from Kamryn’s Creations include decorated cakes. “Tons and tons of cakes,” she told us. She offers everything from sheet cakes, to birthday cakes, to full on, gorgeous wedding cakes.

So what’s next for Chasnis? Probably world baking domination. Until then, she’s going to enjoy her newly acquired driver’s license, and put together just a few more incredible cakes, shoot a few tutorials, assemble a couple of cookie kits, and finish her homework. No big deal for this teenage baking dynamo.
