NEAR WEST SIDE — Two former Publican alumni are launching a sweet and savory baked goods business with the help of Metric Coffee on the Near West Side.
From inside a commercial kitchen above Metric Coffee’s cafe, pastry chef Erika Chan and chef Sieger Bayer have crafted an assortment of doughnuts, croissants and other baked goods for their new endeavor, Brite Donuts And Baked Goods.
The duo’s pastries will be available 8 a.m.-3:30 p.m. daily at Metric Coffee’s storefront, 2021 W. Fulton St., starting Nov. 7.
They aim to prioritize the safety of their customers with online ordering and contactless pickups.
Customers will be able to pre-order dozen or half-dozen orders of the baked goods online for pickup. The duo is already taking pre-orders on their website for larger orders.
Guests can expect familiar baked goods with a “super fun … little twist” like a ham and cheese croissant with tomato jam, Chan said.
“We really want to introduce people to some new … but very approachable flavors, [while] making them fun, exciting and interesting,” Chan said.
Among the baked goods ($3.50 to $5) are Danish filled with sour cherry cheesecake, cheddar chive croissants and Earl Grey sticky bun buns. The doughnut flavors include Fruit Loop, chili cream cheese, apple fritter with spiced tepache glaze and cold brew cream with blueberry glaze.
During the holidays, Chan and Bayer will also roll out four flavors of holiday pies starting at $35.
With so much up in the air with the pandemic, they aim to offer a sense of “routine and comfort” and “brighten” people’s day, Chan said.
“When you open a Brite box, there’s comfort there … something you know is an amazing product,” Bayer said. “It will kind of bring you back to feeling like there’s hope.”
