When your wife says enough is enough, you’d be a smart cookie to listen to her. You just may suddenly find yourself opening your very own store in Detroit, serving up your hand-made, all0natural cookies to the masses. That is exactly what happened to Jeffrey Gisstennar, owner of Good Cookies, who is about to open his very first brick and mortar store in Detroit.
Gisstennar is a real estate agent and broker by trade, and turned to baking to relax after stressful days out in the field. “I would make cookies, and my wife would take them to work, for people just to try them," he said. "And it got to the point where people were just asking, ‘When are there going to be more cookies?’ And I was baking like, seven, eight dozen a week, and my wife was like, ‘If we are going to do this, we need to get something for it.’ ”
The sugar cookie with lemon zest from Good Cookies is our pick for Sweet Treat of the Week, a series highlighting people and products from around Michigan who are using Pioneer Sugar in their creations.
Check out our interview with Gisstennar below, where we talk about how he transitioned from a hobby baker into bakery owner, what sets his cookies apart, and why baking calms him down.
After baking for fun for a while, Gisstennar got “really serious about it” in 2012. He invited over friends and family to taste test a variety of cookies, and got their reactions via comment cards. He also ran by a variety of business names with them, and a comment by a friend sealed the name “Good Cookies,” because, you know, these are pretty special treats, so why not just call them what they are? Gisstennar’s best friend took a bite of one of the cookies, and exclaimed “Wow, that is a good cookie,” and another friend said, “Man, just eat it!” Gisstennar was taking notes the whole time, and a new business name was promptly recorded.
Good Cookies, as a company, was officially created in 2013. Gisstennar originally started baking out of his house, and then started renting space in local commercial kitchens. Now, he’s about to open his very own shop, in a building that he bought and has lovingly remodeled in northwest Detroit. The former hair salon has been painted and upgraded, a kitchen has been installed in the back, and photos of jazz greats have been hung out front. Gisstennar is planning on opening the new space by the end of October 2020.
Good Cookies are completely homemade, using all natural, whole ingredients. There are no preservatives in these little guys, just things like real butter, sugar, eggs and flour. “I only make them with real ingredients,” Gisstennar said. “Everything is natural. I have no additives, no preservatives.”
The signature cookie Gisstennar makes is a simple sugar cookie that gets the lovely addition of fresh lemon zest and lemon juice. “Folks start eating it, and they get addicted to it,” he said. He also offers oatmeal raisin, peanut butter, double chocolate, strawberry, and the always-classic chocolate chip.
The new store will allow Gisstennar to serve up fresh cookies throughout the day to his customers. He’s pretty adamant that his cookies need to be made, and enjoyed, on the day they are made, for the ultimate experience. “I don’t allow cookies to just sit around,” he said. We are pretty sure they won’t be. Cookies this good are meant to be gobbled up.
