A popular bakery for over twenty years, Rosie’s Pies is a sweet family affair. Located in Kawkawlin, near Bay City, the bakery produces dozens of flavors of pies and is about to enter into its busiest season of the year.
“I’ve always worked in the restaurant business, all my life,” said Pat Schnell, owner of Rosie’s Pies. “I got into this with another bakery and it just snowballed from there.” Rosie’s is about to enter its 21st year of business.
The bakery is named after Schnell’s mother, Rose George. "There were nine of us kids, so we thought that was justified, " Schnell said. Her large extended family lends a hand at the bakery, contributing their expertise. “I work with two of my sisters, and my niece. And then I have nieces who will come in for the holidays and when we need help,” she said. “It’s kind of a family thing. We all stand together.”
“It works out,” Schnell explained with a laugh. “We fight a little bit, but in the end it works out.”
It’s a good thing that she has such a large family willing to lend a hand when needed, because over the Thanksgiving holiday the busy bakery will typically sell about 2,500 pies.
Rosie’s pies are created the old fashioned way, with each crust hand rolled, and all the fillings homemade. “Each pie has its own individual recipe tweaked by me,” Schnell said. “My crusts are made with pastry flour because it is a lot smoother compared to other flour types. We also use Crisco, eggs, and another secret ingredient. It took me a few years to perfect it.”
They offer quite a variety of pies here, from classic fruit-filled ones like cherry and apple, to some you might not see on the regular, like Dutch apple cream cheese, Berries of the Forest, and a Say Yes to Michigan version. Cream pies are also very popular, including coconut cream, banana cream, chocolate cream, and an intriguing sounding orange creamsicle pie.

This beautiful pie comes out with an incredible round dome of flakey pastry, that ensconces a verifiable mountain of fresh apples. When baked, the pie weighs a whopping four pounds.
The most popular pie at the bakery is the Dutch apple, which comes crusted with a crunchy, sugary streusel topping enhanced with cinnamon. Schnell’s favorite? Her pumpkin pie. “My pumpkin pie is so delicious because it is made with Libby’s pumpkin,” she said. “It’s a superb mix to work with after adding my own ingredients.”
“Give me the pumpkin,” Schnell said. “I could eat that all day.”
Rosie’s Pies can be had at the bakery in Kawkawlin, and at Jack’s Fruit & Meat Market and Brian’s Fruit & Meat Market in West Branch. If you’d like to have a slice of pie after your meal, you can dine at the Turkey Roost, Tony’s Restaurant, and Alex’s Railside.
